My life was made whole once I learned that Mrs. Pinson thinks Junior is a natural when it comes to challah baking.
I’ll put several comments in this one.
The bread sold today is full of chemical preservatives. Real bread lasts just a day, or two 1maybe. That would be sourdough, which was the minhag in the alte heim (who was the Tannah who asked Achav where to cut bread first? (Answer — the well baked side, not found today, but is in sourdough) Remember that Gemara?). When my father came to America, he bought what was then called rye bread from a local Boto. Park bakery every day on his way back from shul, whether he could afford it or not (till his doctor told him it leads to obesity and heart conditions.)
Even in America, everyone bought sourdough / rye bread, till the invention of the toaster, for which Wonder Bread started (1920s) selling white bread (pre sliced) which fit into the crude toasters of the day.
Today the heimishe bakeries sell delicious egg chalahs that in truth, last two-three weeks.
Dips are designed to mask the taste of old bread, that’s another reason why they’re so popular. A real fresh bread tastes great on its own, without dips, which is why we wash on bread, add other things, might as well make a different bracha.
It’s very beautiful that they are baking Challah, such a wonderful mitzvah!
